Gingerbread

Zutaten die Sie benötigen

  • 7x protein
  • 180g icing sugar
  • 250g ground hazelnuts
  • 2 tablespoons lemon juice
  • 100g sugar
  • 50g each finely diced candied lemon and orange peel
  • 10g cinnamon powder
  • 1 packet of gingerbread spice
  • 50g flour
  • 100g fine oat flakes
  • Baking wafers (8cm diameter)
  • 200g chocolate coating (dark)
  • 1 teaspoon of cardoon root tincture

Zubereitung

  • Beat the egg whites until stiff and gradually fold in the sifted icing sugar
  • In another bowl, mix the following ingredients well: hazelnuts, lemon juice, sugar, candied lemon peel, candied orange peel, cinnamon powder, gingerbread spice, flour, cardoon powder, oat flakes
  • Fold these well-mixed ingredients into the beaten egg whites
  • Place the dough in small heaps on the wafers
  • Bake the gingerbread in a preheated oven at 180 degrees (fan oven 160 degrees) for about 15 minutes
  • Cover the cooled gingerbread with dark chocolate coating
